Antioxidant activity of aqueous infusions of low-vitamin rose hips

Abstract

Rose hips are used in traditional medicine and industry and, depending on the vitamin content, are divided into low- and high-vitamin. Modern research should be focused on creating maximum product value for the consumer. In this work, the parameters of hydrothermal extraction were adapted to the conditions of home preparation of rosehip tea, and the resulting infusions were tested for antioxidant activity (AOA) using the potentiometric method. It has been shown that an increase in the AOA of infusions is facilitated by a decrease in the particle size of rose hips and an increase in water temperature. In the case of particle sizes of 1,51–2,0 mm, an increase in brewing temperature from 50 to 100 ºС was accompanied by an increase in the AOA of infusions from 205,7 to 662,8 µmol-eq/g, which in percentage terms was characterized by an increase in the AOA value by 222 %. In the case of particle sizes of 0,11–0,6 mm, an increase in brewing temperature from 50 to 100 ºС was accompanied by an increase in the AOA of infusions from 1010,5 to 1357,9 µmol-eq/g, which in percentage terms was characterized by an increase in the AOA value by 34 %. The dependence of the AOA of aqueous infusions of rose hips on the brewing temperature is described by a second-order equation with an approximation coefficient R2 > 0,97.
