BİTKİ SIXLIĞININ ŞƏKƏR ÇUĞUNDURU KÖKÜMEYVƏSİNİN KEYFİYYƏTİNƏ TƏSİRİ

Abstract
Ədəbiyyat materiallarından məlum oldu ki, şəkər çuğunduru və onun emalından alınmış məhsullar üzvi və qeyri-üzvi maddələrlə zəngindir. Şəkər çuğunduru nəinki qida sənayesində, həmçinin heyvandarlığın inkişafı baxımından yem istehsalında, spirt sənayesində və digər sahələrdə istifadə olunan keyfiyyətli xammaldır. Şəkər çuğunduru karbohidratların nümayəndəsi olan saxaroza ilə daha zəngindir. Protopektinlə zəngin olan şəkər çuğundurundan yüksək keyfiyyətli şəkər istehsal etmək mümkün deyildir. Protopektin suda pis həll olduğuna görə şirədə bulanıqlıq əmələ gətirir. Bu da hazır məhsulun keyfiyyətinə mənfi təsir göstərir. Yetişməmiş şəkər çuğundurundan fərqli olaraq yetişmişdən alınmış şirənin tərkibində demək olar ki, protopektin olmur. Şəkər çuğundurun emalı prosesində müxtəlif çevrilmələrə məruz qalaraq aminturşuların, aminlərin və amidlərin sintezində iştirak edirlər. Amidlər karboksil qrupunun OH-nın amin qrupu (NH2) ilə əvəz olunması hesabına əmələ gəlirlər. Şəkər çuğunduru yarıməvəzolunan aminturşularla da zəngindir. İnsan və heyvan orqanizminin onlara olan ehtiyacı qismən ödənilir və ancaq müəyyən hissəsi isə qida hesabına ödənilir. Yarıməvəzolunan aminturşularına arginin, tirozin və histidin aid edilir.
