FEATURES OF SAMPLING EGGS FOR MICROBIOLOGY

Abstract

The article analyzes the stages of research of chicken eggs for the presence of salmonella in accordance with the current regulatory documents. It has been established that the most important stage is sample preparation of eggs. It is recommended for research to use all components of the egg, as well as to conduct studies of more samples from one batch of products.
