Food Sanitation Evaluation on Home Industry Tofu in Bojong Nangka, Tangerang

Abstract

Most of the needs of tofu in Indonesia are met by home industries. On the other hand, according to observations, there are still many home industries that have not implemented hygiene and sanitation standards by state regulation. This study aimed to analyze the condition of sanitation of tofu home industry located in Bojong Nangka village. This study was carried out by two steps: 1) interviewing the factory owner and the employee; and 2) by observation for analyzing the condition of factory sanitation. The result showed this home industry did not fulfill the BPOM regulation for sanitation. This result was evaluated based on the condition of raw materials storage, water use, sanitation equipment, personal hygiene, and waste treatment that did not meet the BPOM standard. Poor handling of the products gave a negative impact on consumers. However, it was necessary to delivery socialization about sanitation and hygiene for tofu home industry in accordance with government regulations.
