MANAGING OF DEFECTIVE RISKS IN THE PROCESS OF COFFEE PRODUCTION

Abstract
The article examined the complex of structures for management, analysis, assessment of production and design risks. It was founded that risk management is an integral part of the production process throughout the life cycle. The growth of interest in risk management and features that hamper the development of risk management in Ukraine are analyzed. Theories of multilevel effective analysis on risk identification, assessment, search for risk factors and the degree of damage from risks are presented. Methods of quantitative and qualitative analysis are considered. Step-by-step algorithms for identifying risks for a certain subject, as well as for control points of the technological process of product production, are defined. Practical experience in using FMEA and XACCP systems in management and impact on crisis situations in production and design are applied. The main types of defects in the production of coffee are formed. The quantitative and qualitative risk assessment. A number of recommendations and possible tools for the introduction of sorting equipment for reducing coffee defects were provided, the use of a system of checks of stages of the life cycle of production with the help of checklists and a system for identifying and delineation risks in the production of coffee products was proposed. The results of the analysis and evaluation of the elimination of the risks of defective production, which influence the increase of the organization’s prestige, growth of sales and the appearance of new customers, are presented.
