MODERN INNOVATIVE TRENDS IN THE FORMATION OF A COMPETITIVE STRATEGY OF RESTAURANT ENTERPRISES

Abstract
Purpose. The aim of the study is to research of modern innovative trends and substantiation of the complex of innovations for the formation of competitive strategy of enterprises of restaurant economy. Methodology of research. The methods of inductive and deductive cognition, analytical, structural and logical are used in the process of research – in the study of modern tendencies of innovations in the restaurant business of Ukraine; methods of analysis and synthesis, logical generalization and systematization – when substantiating the complex of technical, organizational and technological innovations for the formation of a competitive strategy of the enterprise of restaurant industry. Findings. The study of the history of the establishment and development of restaurant business has made it possible to determine that there is a certain emphasis in the organization of food according to changes in national traditions, requirements and requests of consumers for each stage. It is established that the modern restaurant business is represented by a large variety of types of institutions: from classic fast food to the author’s restaurants of “high cuisine”. It is substantiated that at the present stage the formation of competitive advantages of the restaurant industry enterprise is carried out on the basis of active search of innovative determinants both in the culinary skills and in the technique of service, which greatly enhances the image of the restaurant business enterprise and promotes the strengthening of its competitiveness. The innovations, which are used by restaurants of the restaurant industry in processing and making dishes, are described, at the organization of the process of production of food and customer service. The complex of technical, organizational and technological innovations for the formation of a competitive strategy of the enterprise of the restaurant industry was substantiated based on the generalization of the results of the research of modern innovative trends. Originality. A complex of technical, organizational and technological innovations has been formed. This complex combines multifaceted alternative types of innovations unlike existing ones, promotes the implementation of the functions of the restaurant industry enterprise and provides the opportunity to form an effective competitive strategy for the restaurant business enterprise. Practical value. The formed complex of innovations can be used to form an effective competitive strategy of the enterprise of restaurant economy.
