MODERN VIEWS ON CONSUMER PREFERENCES AND PROBLEMS OF SAFETY OF VEGETABLE OILS

Abstract
The article describes the consumer advantages of fats. The place of vegetable oils in the general diet of dietary fat consumption is determined. The article shows the special value of liquid oils for human being due to the content of unsaturated fatty acids, fat-soluble vitamins. The peculiarities of the nutritional value of particular vegetable oils are analyzed, depending on the type, the technology of obtaining. The article lists the main types of vegetable oils used for nutritional purposes. The consumer benefits of certain types of vegetable oils are distinguished. Considerable attention is paid to palm oil, which causes ongoing disputes among both scientists and practitioners on issues of quality and safety. The emphasis is put on the transysomers of fatty acids, their negative effects on the human body.
