ORGANIZATIONAL AND ECONOMIC PRINCIPLES OF MILK PRODUCTION AND REALIZATION OF MILK BY PRIVATE PEASANT FARMS

Abstract
Purpose. The aim of the article is the development of practical recommendations for the production and realization of milk and dairy products in individual peasant farms. Methodology of research. General scientific and special methods are used in the process of research are used, in particular: abstract and logical (for theoretical generalizations and formation of conclusions); monographic (in developing the model of integration links of personal peasant farms in the system of inter-economic integration association); statistical and economic (for studying and analyzing the social and economic status of private peasant farms); sociological (for questioning owners of personal peasant farms); calculation and constructive, comparative and graphic (for comparison of social and economic indicators of the functioning of individual peasant farms by years) and others. Findings. It is revealed that the sale of dairy products is more profitable compared with the implementation of milk. It is established that PPF owners sell dairy products mainly on retail food markets. It has been determined that sales of sour cream are accompanied by a significantly lower level of transaction costs compared to milk sales, but they are offset by a significantly higher price in terms of milk. It is established that the issue of creating an advanced certified procurement network for the collection of dairy raw materials remains problematic. Originality. It is established that due to the lack of European standards for dairy products and the low level of technological equipment, most dairies cannot guarantee the quality of dairy products. It was revealed that the lack of proper state control over the quality of raw materials and products gives rise to unfair competition and falsification of products on the milk market. Practical value. It is proposed to carry out the optimization of the system of state control and supervision over the safety and quality of dairy raw materials to conduct a state inventory of procurement points, which carry out the purchase of milk in the PPF; to ensure compliance of existing procurement points with veterinary and sanitary requirements by additional arrangement both at the expense of state funds and at the expense of enterprises, which include purchase points; to ensure the attraction of private investments in the field of certification and control of dairy raw materials purchased in PPF.
