PERSPECTIVE DIRECTIONS OF MANUFACTURER OF TOMATO KETCHUP

Abstract
The results of researches on optimization of technological scheme of tomato ketchup production on the basis of concentrated tomato products are presented. The block diagram of determination of control critical points for the evaluation of quality of finished products in accordance with the requirements of international standards has been developed. The modern methods of heat treatment of raw materials and formulations of concentrated tomato sauces have been analyzed.
