PURPLE SWEET POTATO DONUTS ENTREPRENEURSHIP

Abstract
A Ubi purple is one kind of tuber crops which are produced in Indonesia. Purple sweet potato has various benefits but its use by the community is limited to consumption. One of the efforts to increase economic value is snack food processing. Donuts are one of the most popular cakes and their popularity is increasing in Indonesia. The purpose of this final project is to formulate the composition of purple sweet potato donuts, analyze the economy of purple sweet potato donuts, market purple sweet potato donut products, and analyze the added value of purple sweet potato donuts. The method used is making purple sweet potato donut dough using a ratio of wheat flour and purple sweet potato formulations, namely 50: 150, 150: 50, and 100: 100, then an economic analysis is carried out consisting of production costs, cost of goods manufactured, selling price, analysis. loss and profit, eligibility criteria, direct and indirect marketing, as well as added value using the biological method. Making purple sweet potato donuts using formulation 3, namely 100 grams of wheat flour, 100 grams of purple sweet potato, 25 grams of butter, 1 gram of fermipan, 35 grams of sugar, 20 grams of eggs, 0.5 grams of vanilla, 0.5 grams of salt, 25 grams of milk, 40 ml of water. Economic analysis of purple sweet potato donut products obtained at the cost of production of Rp. 914 / donut, BEP of 302 donuts from marketing 522 donuts of purple sweet potato donuts within one month obtained a turnover of Rp. 522,000. Direct marketing of purple sweet potato donuts is more desirable than indirect marketing through WhatsApp. The ratio of added value to the purple sweet potato donut product is 70%
