Abstract

The fish farming is assuming increasing importance in the food supply outlook due to high population growth rate that determines population increased which could endanger the food supply. Thus, the aquatic production can assist with this demand for food in quantity and quality. However, activities related to fish farming managements demand, mainly involving water quality, as there are many physical and chemical variables that must be evaluated and monitored to ensure the success of activities, among which the temperature. As fish are ectothermic (internal body temperature varies according to the ambient temperature) is the temperature that determines the metabolism of these organisms, responsible for the physiological activities such as breathing, digestion, reproduction and feeding. Moreover, aquatic organisms have lower and upper thermal tolerance limits, optimum temperatures for growth, preferred temperature, thermal gradients, temperature limitations for migration, spawning and egg incubation. In other words, each species has their comfort zone, so their knowledge is key, and select species able to express all their genetic potential and, thus, provide greater productivity. Therefore, this review has the aim of highlighting the knowledge about the influence of water temperature on fish farming processes, approaching the most relevant aspects of this environment variable in several species.
