Study of effect of drying on the colour of Artemisia dracunculus L. leaves in different treatments of drying

Abstract
The affection of different treatment of drying of Artemisia dracunculus L. studied. Artemisia dracunculus L. leaves dried base on shadow, sun, oven (70◦C, 100◦C) and microwave methods. In different time intervals, sampling performed in order to determine the moisture content and color analyzing. Color parameter measurement on dried and fresh leaves revealed that the most changes of color occurred in the initial moisture content of 1-10 %, hence it is concluded that color changing is a function of time and temperature of drying. As the drying rate is less than temperature treatment, practically less changing in color observes.
