СУДОВО-ЕКОНОМІЧНА ЕКСПЕРТИЗА ПРАВОПОРУШЕНЬ у РЕСТОРАННОМУ ГОСПОДАРСТВІ

Abstract
The area of economic activity of the restaurant business covers the enterprises intended for the production, sale and organization of consumption of food and culinary products. Organization of the system of documenting the motion of raw food, purchase of goods, culinary products and semi-finished products, other products of own production in the safe, at the place of production and at points of sale involves a number of measures, where the sources of crime are revealed within the process of research. Based on the studies the author has determined that the activity in the restaurant business is related to the participation of a large number of financially responsible persons in receipt, storage, production and sale of food and culinary products (the main part of which is of the weight character) and getting the cash earnings from individuals and legal entities. All this, including a variety of names of culinary products and recipes of their production, creates the prerequisites to embezzlement, thefts and other offences, to avoid which it is required to have a thorough knowledge of the organization of work, accounting in this field of business. На основании исследований определено, что деятельность в сфере ресторанного хозяйства связана с участием большого количества материально-ответственных лиц в получении, хранении, производстве и реализации продовольственных товаров и кулинарной продукции (основная часть которой весового характера) и получении денежной выручки от физических и юридических лиц. Все это, включая разнообразие наименований кулинарной продукции и рецептур ее изготовления, создает условия для разворовывания, краж и других правонарушений, для предотвращения которых необходимо глубокое знание особенностей организации работы, бухгалтерского учета в данной сфере хозяйствования.
