A Discussion on the Contribution of Missionary Bernard Emms Read to the Development of Modern Dietary Therapy in China

Abstract
After the introduction of modern Western nutritional science to China, it was initially welcomed and promoted by coastal intellectuals, notably Ding Fubao. Unlike Ding Fubao's focus on adopting Western techniques, Bernard Emms Read, a pharmacologist who came to China as a missionary, popularized knowledge of dietary therapy through an approach of "interpreting Chinese dietary therapy through the lens of the West." Through a comprehensive review and study of Bernard Emms Read's literature on dietary therapy, it was found that he possessed a scientific research mindset and a multi-dimensional international perspective. From multiple angles including as an academic researcher, an objective investigator, a hands-on practitioner, and a government administrator, he explored extensively from ancient to modern times and across cultures. His research encompassed various aspects such as food nutrient analysis, nutrition surveys, scientific dietary recommendations, and food economics during wartime. While emphasizing the improvement of public health, he also significantly contributed to the development of modern dietary therapy and nutritional science in China.
