Analysis of the quality indicators of apples during long-term storage

Abstract
The article presents the results of studies of the biochemical composition of fruits of late apple varieties during cold storage. The laws governing biochemical processes during storage and varietal specifics and rates of these processes are established. A positive tendency for the preservation of simple sugars, organic acids and pectin substances during cold storage of fruits in a controlled atmosphere is revealed. It is determined that cultivar Remo retains the largest amount of simple sugars during the storage process
