Antimicrobial and antioxidant properties of hydrosols produced with biologically active substances

Abstract

Production of natural food is a trend, which obligate producers to use natural preservatives such as: bacteriocins or plant or animal compounds. Antioxidant and antimicrobial properties of hydrosols containing biologically active substances of plant, animal and microbial origin were verified in the study. Nisin, lysozyme and a mixture of lysozyme and cystatin were used as bioactive substances. The rosemary and garlic extracts were used as substances of plant origin. Hydroxypropylmethylcellulose was used as the basic substance. The results of experimental hydrosols were verified in relation to synthetic preservatives – hexamethylenetetramine. Antioxidant property was analyzed as the DPPH free radical scavenging activity. Diffusion test was used to check antimicrobial properties of experimental biocomposites against Pseudomonas fluorescens, Staphylococcus aureus and Candida albicans. The highest antioxidant activity (28 mg Troloxu / ml) was observed for rosemary extract. The best inactivation effect of microorganism growth was obtained for biocomposites with nisin. The largest zones of growth inhibition against Staphylococcus aureus and Candida albicans (480 mm2 and 80 mm2 respectively) were observed for biocomposites with nisin or lysozyme. Reduction of Gram-positive bacteria and yeast was noted for rosemary extract as one from plant origin bioactive substances used in experiment.
