ANTIOXIDANT VITAMINS AND MINERALS IN DIET OF STUDENTS FROM FACULTY OF NURSING AND HEALTH CARE WITH SPECIALIZATION OF THE DEPARTMENT OF DIETETICS IN MEDICAL UNIVERSITY OF BIAŁYSTOK

Abstract

Background. The aim of this study was to estimate consumption of antioxidant vitamins and mi¬nerals in students of the department of dietetics from Faculty of Nursing and Health Care in Medical University of Białystok in comparison to the recommended values. Materiał and methods. The content of vitamins (A, E and C), macroelements (Na, K, Ca, P, Mg) and microelements (Fe, Zn, Cu, Mn) in daily diets of 43 students was assessed by 24-hour dietary hi-story in March 2007 year. The freąuency of fresh and boiled vegetables and fruit consumption was es-timated using our questionnaire. The state of vitamin C in students was estimated by the test using 2,6-dichloroindophenol. Estimation of the supply of antioxidant vitamins and macro- and microelements was based on the safety level norms for women aged 19-25 with moderate physical activity Results. The content of vitamin C in daily rations covered the norm for this vitamin consumption. The consumption of vitamin A was higher than the recommended value. Insufficient intake of vitamin E and minerals: K, Ca, Mg, Fe, Zn, Cu, Mn. The consumption of sodium and potassium was found to be five times larger than the accepted norms. Vitamin C saturation was good and adeąuate in most of the examined students. Conclusions. It is recommended to increasing vegetable and fruit consumption and to reduce the amount of highly-processed products and the products rich in sodium.
