ИСПОЛЬЗОВАНИЕ ПРЯНО-АРОМАТИЧЕСКИХ РАСТЕНИЙ ЮЖНОГО КАЗАХСТАНА В ПРОИЗВОДСТВЕ СОУСОВ-ПРИПРАВ

Abstract

In the article the analysis of market of sauces and seasonings is carried out; it is offered to apply wild-growing plants of South Kazakhstan as seasonings in technology of sauces in order to enlarge an assortment of sauces and seasonings on the base of natural spicy-aromatizing photocompositions without using of synthetic dyers, antioxidants and preservatives. Wild-growing plants contain almost all vital food components allowing to expand ability to apply alternative sources of biologically active substances, boost quality and competitive ability of new products with given consumer properties: vitamins, carbohydrates, proteins, fats, mineral salts and water.
