MINERAL COMPONENTS IN CHEESES AND WHEY MADE FROM EWE’S AND GOAT’S MILK

Abstract

The objective of the research study was to determine the content of several selected mineral components in some types of goat’s and ewe’s milk cheeses, as well as in the whey obtained after those cheeses had been manufactured. The research material consisted of acid-set (soft) and rennet (hard) cheeses prepared as three variants: ewe’s, ewe’s-goat’s, and goat’s milk cheeses. The content of Na, K, Ca, Mg, Zn, Mn, Fe, and Cu was determined in both the cheeses and the whey. The acid-rennet set ewe’s milk cheeses contained more Na, K, Ca, Mg, Zn, Fe, and Cu ions than the acid-set ewe’s milk cheeses. The acid-set goat’s milk cheeses had more Na and Mn compared to acid-rennet set goat’s milk cheeses. The results obtained made it possible to classify the products analyzed in four groups, which differed in the profile of the macro- and microelements studied. The first group contains acid-set whey (both from the goat’s and ewe’s milk). The second one comprises all three types of acid-and rennet-set cheeses whereas the third one: all the types of acid-set soft cheeses. The fourth group is made up of whey samples obtained while the acid-rennet-set cheeses have been manufactured. The products analyzed were arranged according to their decreasing nutritional value in the following manner: acid-rennet-set cheeses (from ewe’s, sheep’s-goat’s, and goat’s milk), acid-set whey, acid-set soft cheeses (from ewe’s, ewe’s-goat’s, and goat’s milk), and rennet whey.
