Abstract
The mills and the techniques used to make bread are elements that have accompanied mankind since ancient times. In Cehegín the milling industry is as old as the very existence of the settlement. Historical antecedents of the mills in Cehegín are treated through sources and censuses, their daily life, the figure of the miller, etc., with the intention of opening a study on an industry with an extraordinary popular and traditional flavor.
