Lactones with a fragrance properties

Abstract
Lactones are organic compounds that are widely distributed in nature. Occur in plants, animals fulfilling often an important role in the life processes [1]. Lactones are interesting object of study, due to the wide range of biological properties they exhibit. Some of them are anti-cancer, other antibacterial, antiviral, anti-inflammatory, antifungal and antiparasites [2 – 5]. Many of the compounds of the lactone moiety is the carrier of taste and smell for at they are widely used in the food industry [2, 6].
