PROPERTIES AND BIOLOGICAL VALUE OF NATURAL AMENDMENT FROM FISH SKIN

Abstract

The relevance of the research in technology of obtaining amendment from collagen fish raw is conditioned with the increase in the amount of wastes generating at processing of fish and structured products. The study of physical and chemical properties and biological value of the amendments from the skin of pike (Esox lucius Linnaeus) of the Volga-Caspian basin and Vietnamese iridescent shark (Pan-gasius hypophthalmus). It is stated that amendment from fish skin has rather high physical and chemical properties and is represented as a protein product. The received amendments should be applied in food industry for production of molded products, clarification of wine materials and beverages.
