Nutritional Profile of Gamma-Irradiated and Non-Irradiated Sesamum Indicum Seeds From Abuja Markets

Abstract
The proximate analysis of irradiated and unirradiated sesame seeds from three area councils in Federal Capital Territory, Abuja was determined. The % moisture and fat content of the stored irradiated (16 kGy) sesame seeds were increased by 1.11%and 0.37% respectively over the control. Irradiation at the same dose however reduced the % crude protein, % fibre, % ash and % DM by 2.35%, 0.18%, 0.23% and 0.49% respectively. This study indicated that irradiation at up to 16 kGy could slightly reduce most of the vital nutritional value of the irradiated stored sesame seeds. This however, should not reduce other protective benefits of irradiation on stored grains.
