Optimization of the method for determining the fatty acid composition of dairy products

Abstract

Chromatographic analysis of fatty acid methyl esters is used to characterize the lipid fraction of food products and is an effective method for detecting adulteration and one of the most important applications in food analysis. The article provides an optimized sample preparation method for determining the fatty acid composition of dairy products to reduce energy costs and analysis time. The entire procedure, from sample preparation to obtaining FAMEs, takes about 2 hours. With the simplified method, the sample preparation time was reduced by 4-5 times and amounted to: for products of non-liquid consistency (cottage cheese, cheese, ice cream, etc.) – 20 minutes, for milk and liquid fermented milk products (kefir, fermented baked milk, katyk, etc.) – 30 minutes. The assessment of the quality indicators of the analysis results using a working sample when implementing the technique showed that its metrological characteristics are lower than in the basic regulatory document, which makes it possible to recommend it for use.
