PRODUCT QUALITY ASSESSMENT OF ACID MILK DRINKS AYRAN OF INCREASED BIOLOGICAL VALUE

Abstract

Made an analysis of the organoleptic and physico-chemical indicators of the quality of samples of ayran, presented on the market of Kharkov. The highest quality sample was determined, which was later used as the basis for the de-velopment of a new type of ayran. As part of the research, a new species of ayran of increased biological value has been developed. Experimentally determined the optimal amount of apple-pumpkin puree of the total amount of ayran.
