PSYCHOLOGICAL AND HISTORICAL RECONSTRUCTION THROUGH LITERARY TEXTS «ODESSA KITCHEN» AS FACTORS INFLUENCING THE FORMATION OF THE NATIONAL MENTALITY

Abstract
The article analyzes the evolution of «Odessa kitchen» in the context of social and cultural historical transformations. «Odessa kitchen» is considered, on the one hand, as a cultural construct that reflects the values of national culture on the level of ev-eryday life, on the other hand as a dominant national mentality. During the research, we used the method of psycho-historical reconstruction, the method of hermeneutics, the method of content analysis, of introspection, of interviews and others. The object of research: «Odessa kitchen» as an element of national culture. The subject of research: the study of the major trends and evolution «Odessa kitchen» using the method of psycho-historical reconstruction. The theoretical significance of the study is to use the research results in the de-velopment of the conceptual foundation of the theory and practice of national and regional mentality and its components, as well as the development of recommendations of doing restaurant business in Odessa. Practical significance: the introduction of research results in the activities of the city’s restaurants, the Department of Social and Applied Psychology Odessa National University Mechnikov. Thus, the theoretical and practical importance of this issue, the lack of its elabora-tion indicate the relevance of this study.
