Quality and safety of raw cow’s milk in private farms

Abstract
Introduction. Increased microbial contamination of raw milk is the result of non-compliance with the sanitation requirements of its obtaining, primary processing, cooling, storage and transportation. Analysis of the raw milk production according to the State Statistics Committee of Ukraine data showed that currently there are about 78% of the total number of cows maintaining in private farms in Ukraine. Private farms produce and supply processing plants from 60 to 70% of all raw milk in the country. The goal of the work was to compare quality and safety indicators of cow's milk in dairy cooperatives and collecting points. Materials and methods. Analysis of milk quality and its physicochemical composition: fat and protein content, milk falsification, milk-solids-nonfat (MSNF), titratable acidity and temperature were determined using the ECOMILK-M ultrasound milk analyzer according to GOST 7057:2009. The amount of somatic cells in milk was determined using the Prescott-Brid method according to GOST ISO 13366-1 / IDF 148-1: 2014, inhibitors – using BRT test and ROSA Milk test according to GOST ISO 13969: 2005. Results of research and discussion. It is established that milk at dairy cooperatives meets the requirements of GOST 3662-97 in 52.3% of cases, this indicator is by 1.4 times higher (р ≤ 0.05) in comparison with milk stored up at collection points equipped with coolers, and by 8.6 times higher (р ≤ 0.05) in comparison with milk stored up at collection points without coolers. Almost similar number of milk lots containing inhibiting substances have been registered when receiving for processing from dairy cooperatives and collecting points, it varied from 5.2 ± 0.4 to 7.7 ± 0.6. One of the most common methods of milk adulteration obtained from private farms was water dilution. From 19.7 to 51.2 samples of milk contained water in the amount of 2.3–6.2%. Accordingly, in raw milk decrease in fat and protein content, MSNF, density registered. Conclusion and prospects further research. Collective farms processing 8.3% of extra grade lots of milk, 61.8% of highest and first grades, 14.5% of second grade, and 15.2% of ungraded milk. The farms, which are equipped with nowadays equipment and milking technology in milk houses in compliance with sanitary requirements, receive milk, mainly of the highest grade.
