Study of Nutritional Value of Some Unique Leafy Vegetables Grown in Latur District

Abstract

A study was conducted to determine the nutritional value of unique leafy vegetables like spinach, fenugreek, country sar portulaca, dill dill fruit, safflower leaf, horse gram leaf and garden purslave. Therefore, to achieve the objectives of present investigation ash and iron has been determined From the present investigation it has been observed that the horse gram leaf (4.50%) exhibited relatively very high content of minerals as compared to the mineral content of common vegetables (1.5 - 2.4 % ). The spinach, country sar, safflower leaf and garden purslave found normal mineral content (1.49 - 1.96 %). Fenugrek and Dill Dill fruit observed moderately high precentage of ash i.e. 2.86 and 2.37% respectively.
