SURVEILLANCE OF MILK CONFORMITY PRODUCED IN A SMALL FARMHOUSE

Abstract

The aim of this study was to assess the hygienic quality of raw milk delivered in a small holding capacity. Conformity assessment was done by identifying cargo milk totaled germs, somatic cell count and presence of inhibitors. The material under investigation was represented by 40 samples of raw milk sent for processing in a small unit capacity, harvested within the time from January to December 2014. Due to its complex composition and high content of water, milk is one of the environments favorable growths of microorganisms. Impurities milk provides important data on the hygiene conditions in which milk harvesting was done and how it was handled. Milk quality is important not only for the farmer but also for processing units that convert milk products. The mean total number of bacteria was between 11.750 cfu / ml and 128,829 cfu / ml. The somatic cell count average value was between 13000 at / ml and 10935 at / ml. Note that all samples were negative for identifying inhibitors. If the milk is milking following good work practices (GMP) and good hygiene practices (GHP) milking room, followed by rapid cooling to 2-4 ° C, its hygienic quality will be consistent standards EU.
