Taste qualities estimation by taste sense and potentiometric sensors

Abstract

Selected aspects of food product quality estimation eg. definition of quality, selected methods of quality estimation have been presented. Application of artificial potentiometric taste sensors has been discribed more detailed. They consist of several ISE (Ion Selective Electrodes) or ASSE (All Solid State Electrodes) electrodes. The action of such sensors have been shown. Commercial potentiometric taste sensor has been described. The disadvantages of potentiometric taste sensors have been discussed.
