Total phenol content in seed coat of three cultivars of Phaseolus vulgaris L.

Abstract

The colors of the common bean (Phaseolus vulgaris L.) are related to some of their properties. The objective of this work was to determine the total phenol content in the seed coat of three different bean cultivars. Seeds of the cultivars ‘Delicias 364’ (red coat), ‘BAT-482’ (white coat) and ‘BAT-304’ (black coat) were used. Based on a standard curve of gallic acid the total phenol concentration of the samples was calculated. Significant differences were found among the coat extracts of the three cultivars, with the lowest values for ‘BAT-482’ cultivar with white coat and a ratio greater than 1:20 with respect to the other two assayed. The content of total phenols in the seed coat of common bean cultivars ‘Delicias 364’, ‘BAT-482’ and ‘BAT-304’ was related to their color.
