UPRAVLJANJE KVALITETOM I PRIMENA HACCP STANDARDA U TRGOVINI

Abstract
Termin kvalitet je sve češće prisutan kao imperativ u savremenom poslovanju. Ukoliko želi da bude konkurentno na tržištu, svako preduzeće mora biti fokusirano na kvalitet u svim segmentima svog poslovanja, jer se smatra da kvalitet proizvoda i usluga predstavlja najmoćnije oružje savremenog preduzeća. Kvalitet je pojam koji nije lako definisati, ali se sa sigurnošću može reći da je on relativna veličina. Uvođenje politike kvaliteta i standarda kvaliteta u trgovini proizilazi iz njene delatnosti, tačnije jasno je da trgovina nudi širok asortiman proizvoda i usluga, a u zavisnosti od veličine objekta, taj broj može da se kreće i do nekoliko hiljada. Iz ovoga proizilazi da ni maloprodajni objekti ni potrošači nisu u mogućnosti da na pravi i stručan način obave kontrolu kvaliteta robe koju oni prodaju ili kupuju. HACCP standard se u trgovini koristi kao jedan od standarda kojima je uspostavljen sistem kvaliteta i bezbednosti hrane.
