Value in use of fishes from Polish aquaculture

Abstract

In this review the value in use of selected freshwater fishes from Polish aquaculture with special regards to nutritional value was presented. The greatest percentage of edible part, i.e. carcass was stated in zander (above 70%), lower values (between 66.5 and 67.9%) were found for spike, rainbow trout and grass carp. Bighead carp and common carp showed the lowest carcass share (54.86 and 56.44%, respectively). The results of muscle tissue chemical composition indi-cate that protein content was between 17% for Cyprinidae and 21% for predatory fishes. The lipids percentage fluctuated over a very wide range, i.e. from less than 1% (perch, zander and pike) to almost 10% (bighead carp). The energy value of muscle tissue of fishes varied from 516 kJ/100 g (grass carp) to 792 kJ/100 g (bighead carp). The highest value of nutritional quality index (NQI) for protein (6.90) simultaneously, with the lowest NQI value for fat (0.09) was found for zander. An opposite relationship (fat NQI 1.45 and protein NQI 3.71) was observed for bighead carp. In summarizing the complied results, it should be stated that fishes farmed in Poland for meat con-sumption should be incorporated in greater extent into balanced diet.
