CONTENT OF AMINO ACIDS IN FROZEN AND CANNED STERILIZED PRODUCTS OF BOLETUS EDULIS (BULL: FR.) MUSHROOM

Abstract

The objective of the present study was to compare the contents of amino acids in frozen and sterilized fruiting bodies of Boletus edulis mushrooms. Compared to canned products, the frozen mushrooms contained 2% more dry matter, 7% more total carbohydrates, 13% more total nitrogen, and 5% more raw fat. The level of mineral components was 64 % lower and of protein nitrogen - 5 % lower, whereas the significant differences were found only in the case of mineral components expressed as ash. The content of total amino acids in the frozen and canned products amounted to 1965 - 2033 mg/100 g fresh matter, and the exogenous amino acids constituted 47 % thereof. Compared to the sterilized fruiting bodies of mushrooms, in the frozen products, the content of endo- and the exogenous amino acids was higher as were the levels of glutamine, lysine, methionine, and valine (2 % to 34 %); the level of serine was lower (-2 %). The results expressed as 16 g N of the sums of endo- and exogenous amino acids produced the lower contents of the majority of amino acids determined by 7 - 19 % in the frozen products. The dominant andogenous amino acids in the two kinds of the products were asparagine and glutamine, whereas in the group of exogenous amino acids: leucine and valine. In the frozen and sterilized fruiting bodies of B. edulis mushrooms, no limiting amino acid was found compared to the FAO/WHO (1991) and FAO/WHO/UNU (2007) standards for the adults, whereas, compared to the FAO/WHO (1991) and FAO/WHO/UNU (2007) standard for children, leucine and lysine were limiting amino acids.
