Food additives in the light of Polish and European Union legal regulations

Abstract
Food safety is connected with usage of additional substances. The kinds of food rich in such substances are presented. A classification of food additives from the point of view of their technological function and labelling is discussed. The current legal regulations in Poland and in the European Union have been analyzed. The advantages and risks resulting from using such substances in excess in food have been shown.
