Investigation of Oxygen absorbent in food packages

Abstract
Active packaging is one of the newest concepts in food packages uses in order to supply the customer demands in shortest time. To prepare targeted foods, globalization of food market, transferring to longer distances, on the other side in line with industrial production of protected foods with more moderate methods, active packaging uses. Active packaging changes the conditions of food preservation in a way that extension occurs while sensorial properties of food protected. Absorbents are one of the active packaging techniques where these additives are changing in presence of environmental conditions. Oxygen absorbent, as one of the absorbents, can prohibit the growth of insects and microorganisms, undesirable changes in flavor, color and nutrient loss. On the other hand, it can be the beginner of oxidation reaction or increase the rate of them. Since the direct role of oxygen in shelf life, thus control of oxygen level is of importance in food packaging.
