Isolation and characterization of Lactic Acid Bacteria from shrimp biowaste (Peanus monodon)

Abstract

The purpose of the present work was to characterize promising starter culture of Lactic acid bacteria isolated from naturally fermented shrimp biowaste at coastal dumping areas of Visakhapatnam, Andhrapradesh. Eighteen lactic acid bacterial cultures were isolated. Eight of them belonged to lactic acid cocci and others were referred to genus Lactobacillus. Two strains were identified to species by determination of morphological, cultural, physiological and biochemical characteristics as Pediococcus acidilactici and Pediococcus pentosaceus.
