MINERAL AND AMINO ACID COMPOSITION OF MEAT-BONE PASTE

Abstract

The method of production of ultrafine grinded meat-bone paste is presented. The amino acid and mineral composition of meat bone paste is determined. The analysis highlighted that the meat-bone paste is an abundant source of calcium and phosphorous salts and a quantity of glycine, proline and oxyproline amino acids.
