RELATIONSHIP BETWEEN COLLAGEN AND SELECTED TECHNOLOGICAL PARAMETERS OF CALF MEAT

Abstract

The objective of the research was to determine the relationship between the content of collagen and the selected technological parameters of skeletal muscles in calves. The research material constituted random samples taken from m. longissimus dorsi (lumbar region) – LL and m. semitendinosus – ST of 116 carcasses of calves aged 4 to 6 weeks. In the samples, the following was determined: chemical composition, drip loss, cooking loss; shear force and shear energy were determined using an instrumental analysis, whereas tenderness and juiciness were determined by a sensory analysis. Compared to the LL muscle, the ST muscle contained significantly more collagen and water. It was also characterized by a better tenderness assessed using both the sensory and the instrumental analysis. The level of total collagen was negatively correlated with the content of fat (-0,22 ≤ r ≤ -0,25) in the two muscles assessed. A significantly negative relationship was found between the content of total collagen in LL and its juiciness, shear force, and shear energy. As for the ST muscle, a significantly positive relationship was evidenced between the content of collagen and the shear force. The content of collagen, a main component of connective tissue, was low (0.95 – 1.20 %), however, it significantly impacted some technological parameters of meat and, therefore, it moulded the quality of meat.
