SLAUGHTER VALUE OF DIFFERENT PIGEON BREEDS

Abstract
The aim of investigation was to compare the most important parameters of value for slaughter of the following pigeon breeds: King, Strasser, Wrocławski meat and Homing pigeon. Birds were killed in age of 28 days. After slaughtering dead fowl, liver, muscular stomach, heart, pectoral muscles with breast bone, neck, thighs and shanks, wings, giblets and culinary elements breast bone were weighted. For each bird value for slaughter was calculated. As a result of investigation the greatest slaughter value was found in pigeon of Wrocławski meat breed – 74,6%, slightly lower in Strasser bred – 72,3% and the least in King breed – 70,7% and Homing pigeon – 70,3%. The greatest mass of pectoral muscles breast bone (the most important from culinary point of view) was noted in pigeons of King breed – 88,5g and the least – in Strasser pigeons – 79,7g.
