Study on Soaking and Germination Times on Moisture and Volume amounts of Malt produced from two varieties of Barely Using response Surface Methodology

Abstract

Hordeumvulgaredried and germinated under controlled conditions. In this study two barely lines EBYT-88- 20, EBYT-88-17 used and their malt production ability measured. Combination of germination and soaking times including 24, 36, and 48hr. and 3, 5, 7 days respectively to optimize process, response surface methodology (RSM) by design expert software v. 6.0.2. Results revealed that increasing of soaking time from 24hr. to 36hr. has led to increase moisture. Increase of soaking time ucause to increase of volume.
