TARGETS FOR THE DEVELOPMENT OF THE RESTAURANT INDUSTRY IN KHARKІV

Abstract
Analyzed the network of enterprises in the restaurant (catering) industry of Kharkiv since 2018. The dynamics of indicators, such as the number of enterprises and the number of the created jobs, current state of the development of publicly accessible restaurants (PAR) in the city of Kharkiv is considered. Target orientations of the current state of the development of the organization of a network of restaurants on the example of public catering institutions are analyzed. In the period from 2010 to 2019, the newly created workplaces in catering enterprises were consistently growing, that demonstrated a positive dynamics in development of restaurant business in the city of Kharkiv. Based on the study of the dynamics of the number of catering enterprises and their capacity in the districts of Kharkiv, ranking of district networks was carried out according to the values of analytical indicators "Increase of the number of institutions", "Network capacity increase" and "Growth rate of the network capacity". The obtained data allow us make the conclusion that the most developed are catering networks of the central regions of the city – Shevchenkivsky and Kyivsky. A number of such unfavorable factors as insufficient solvent demand, high level of rent, maintenance costs, credit, etc. hamper development of the catering industry. The state of the economy, because of the accelerated price liberalization, decline in production, paralysis of the payment and settlement system, financial crises, remains difficult. Difficulties of the economy reformation touched catering enterprises. The problems of non-payments, increase of prices and tariffs could not effectively influence on financial economic activity of catering enterprises.
