The Investigation of Drying on Satureja Hortensis Lamiaceae in Different Drying Treatments

Abstract
The affections of different drying conditions on Satureja hortensis Lamiaceae investigated. These leaves underwent drying methods including (shadow, sun, oven (70◦C and 100◦C), and microwave). To determine the moisture content and color analyzing, Sampling performed base on the type of treatment. Results revealed that the most changing in color occurred after 5 % removing of water and no significant changes observed in ΕΔ content in other time intervals therefore they cannot be fit with any special pattern and R2 has less fit in color changing, hence it can be concluded that changes in Satureja color is a function of time and temperature drying.
