Abstract

Kramarenko I.S. Analysis of Ukrainian Bakery Market. The article analyzes the current state and prospects of development of the market of bakery and flour products of Ukraine. The analysis of dynamics and structure of the market for the production of bakery and flour products of Ukraine is carried out. The analysis of the market for bread and bakery products in Ukraine shows a tendency towards insignificant growth. Thus, the volume of sold industrial products of bread, bakery and flour products over the past three years has increased by 13652,6 million UAH or 54,5 %, while the volume of products sold abroad exceeded by 1850,9 million UAH or 74, 5 %. The largest share in the volume of sold industrial products of bread, bakery and flour products is taken by short-term storage products – 55,91 %, and long-term storage – 41,94 %. The main producers of bread and bakery products in Ukraine are presented. The essence of the shadow market of the bakery industry and the basic preconditions that stimulate its further development are revealed. Recommendations for reducing the shadow segment on the market for the production of bread and bakery products are given. The main problems of development and expansion of the market for the production of bakery and flour products are characterized and outlined. The research of the results of the enterprises of the production of flour products testifies to the necessity of state support for the development of the industry, as well as the search for reserves and ways to increase the efficiency of enterprises, taking into account the new trends that arise in the current conditions of the Ukrainian economy.
