Bleaching of Echium amoenum Fisch & C.A.Mey by Gel anoinic, macroprus absorbing and macroprus anion resin for production of a drink by using date syrup

Abstract

Date syrup is a suitable and natural sweetener for using in food stuffs formulation and improvement of its nutritional and sensory characteristics. In this research, to produce Echium amoenum Fisch & C.A.Mey drink with date syrup, first Echium amoenum Fisch & C.A.Mey extract was produced by autoclaving at 120°C. Produced extract was bleached by Gel Anoinic Macroprus absorbing and Macroprus anion resin and after selection of the most suitable method for extract bleaching, amount of 5, 8 and 10 percent of bleaching date syrup were added to Echium amoenum Fisch & C.A.Mey and after that physical, chemical and rheological properties of treatments were evaluated. Statistical analysis of data was done by SPSS software and Dancan test, too. The results of this research indicated that by increasing of bleaching date syrup, characteristics of samples such as brix, ash and turbidity increased and samples pH was decreased. Rheological behavior of samples showed that addition of date syrup in to drink formulation has caused to increase samples viscosity and flow index. All samples indicate behavior of a concentrated fluid.
