RESTRIÇÕES ALIMENTARES NOS EVENTOS SOCIAIS E CORPORATIVOS: A PERCEPÇÃO DE GESTORES DE UMA REDE GLOBAL DE HOTÉIS

Abstract

In the hotel market there is a growing concern with the quality of Food and Beverage services, especially in social events, so that it is able to meet the needs of customers, including those with dietary restrictions. Through interviews with the managers of a multinational hotel chain, operating in Porto Alegre, we sought to gather information on the treatment of dietary restrictions in services that are oriented for the social and corporate events of the hotel chain. The qualitative analysis of the information pointed out the feasibility of providing this service to people with restricted dietary by introducing small changes in the menus offered, providing a higher level of process planning and the training of professionals involved with the service and the necessary expertise for performing the job.
