Where Are The Migrant Restaurants on the Gastronomic Field? A Theoretical Introduction to Immigrant Neighborhood, Refugee Cuisine and Spatial Segregation

Abstract

Since 2011, immigrants from Syria, Pakistan, and Iraq move their cultural assets, specifically their culinary culture, to herein Turkey through opening ethnic food markets, kiosks, and restaurants. Immigrant neighborhoods which generally discussed regarding consumption and leisure industry in London or Berlin case, follow another sort of pattern in Istanbul, the one, in some respect unique. In this study, immigrant restaurants located in Istanbul’s different three subprovince, Bagcilar, Esenler, and Sultangazi, is discussed regarding their spatial process and their position in Istanbul’s food-scape will be discussed. In this discussion, Istanbul’s long-term relationship with immigrant and migration, in-group and out-group perception of immigrant restaurants neighborhoods and consumption of ethnic cuisines to gentrification literature to gentrification and the function of these immigrant restaurants is considered.
