Journal Title: AvaCient - Year 2022, Vol 13, Issue 02

Abstract

Aquaculture, considered as the basis for food security, is an activity with great expectations for the economic growth and development of the region that practices it, so the contribution in research with the consequent technology transfer to this activity contributes to achieve the expected benefits. The tilapia grown in the reservoir of the Miguel de la Madrid Hurtado dam was physically characterized and methods for stunning and disinfection were established. The formulation and procedure for obtaining a derivative product were standardized, which was characterized biochemically and nutritionally, analyzed under two storage conditions, and its possible acceptance was identified through a market study. The results were adopted by 95% of the fish farmers who are members of the Comité Estatal de Sistema Producto Tilapia de Oaxaca, A. C., through training workshops with technical accompaniment in the field.
