PHYSICOCHEMICAL CHARACTERIZATION OF WHEAT STARCH AS AGENT IN THE FORMATION OF BIOFILMS

Abstract

The purpose of this research was the extraction and physicochemical characterization of wheat starch (Triticum aestivum L.), to evaluate its functionality as an agent in the formation of edible biofilms. The extraction process was carried out by wet method and by natural sedimentation. Likewise, the elaboration of a biofilm is carried out with the purpose of being used later as an edible coating for food. A starch yield of 43 % was obtained. The starch was characterized physiochemically presenting the following values: moisture 7 %, ash 0.82 %, protein 1.94 %, fat 1.8 %, water activity 0.19 % and starch purity 89.16 %. The average size of the starch granules was 27.8 μm, the granules presented a mixture of rounded and angular shapes. From wheat starch, a biofilm was obtained that exhibited a smooth, translucent texture without bubbles, also maintained flexibility and resistance, which makes it ideal to be applied as a coating for multiple products, especially foods.
