Technological suitability of Lactobacillus rhamnosus K4 strain for producing probiotic vegetable juice

Abstract

The objective of the research study was to assess the applicability of Lactobacillus rhamnosus K4 strain for the production of cabbage juice-based probiotic product and to determine the health safety of the product suggested as regards the content of the following biogenic amine therein: putrescine, cadaverine, tyramine, and histidine. The experimental material consisted of a fermented cabbage juice (Brassica oleracea var. capitata, kamienna głowa variety) combined with 2% sucrose and 30% carrot juice added to it, and with potentially probiotic lactic acid bacterial strain of Lb. rhamnosus K4. The fermentation conditions were set, i.e. fermentation time: 6h and temp.: 37 ºC; they ensured that the product to be obtained would have the highest overall sensory quality. After fermentation the count of Lb. rhamnosus K4 bacteria increased from 8.20 to 9.09 cfu/cm3 and the pH value decreased from 6.02 to 4.84. The count of the cells remained at a constant level and the overall sensory quality was above 5 arb.u. until the 12th day of storing the juice at a temp. of 4 and 8 ºC. In the juice stored at 23 ºC, the overall sensory quality decreased to 4.7 arb.u. on the 4th day and to 2.3 arb.u. on the 12th day. The content of cadaverine in fresh juice amounted to 0.27 mg/kg and it increased throughout the storage from 5.25 to 11.01 mg/kg. It was concluded that that it was possible to apply the Lb. rhamnosus K4 strain for the production of sensory acceptable fermented cabbage juice with a raw carrot juice added and where the count of those bacteria would determine the probiotic properties and health safety of the product.
